GRAPE VARIETY: Sangiovese 85% Canaiolo 10% Ciliegiolo 5%
YEALD: Grapes yeald of 9 tones per hectare
HARVEST: Hand picking in crates. Grapes Selection on the vine
VINIFICATION: Fermentation in wood tanks at controlled temperature with selected yeats.
Maceration post fermentation of 5 gg.
AGEING: 5 months in wood tanks-bottle. Bottle ageing of 1 month
PRODUCTION: 30.000 bordeaux bottles
ANALYSIS: alcohol 13%, tot. ac. 5,30 g/l, extracts 29 g/l
COLOUR: dark ruby red
AROMA: Deep parfumes of plum and violet with hints of small red fruits like red current,
cherry and rasberry
TASTE: round in mouth, with strong and smooth tannins
SERVE WITH: May be served with Chianina roast steak or with Pienza cheeses also called "cacio".
WAY OF SERVING: Serve at 16-18°C in crystal balloon shaped wine goblets.
HOME AGEING: Keep the bottles lying down in a cool dark place.
