GRAPE VARIETY: Sangiovese 70% Canaiolo 30%
YIELD: Grapes yield of 8 tons per hectare
HARVEST: Hand picking in crates. Grapes Selection on the vine.
VINIFICATION: Storing and ageing must take place in wooden vessels not exceeding
a capacity of 100 liters
AGEING: 48 months in "caratelli" and bottle ageing of 6 months.
PRODUCTION: 2.000 bottles
ANALYSIS: Alcohol: 16%, tot.ac. 5,10 g/l.
COLOUR: Amber in colour, with garnet tones.
AROMA: Bouquet complex, very intense, persistent. It recalls perfumes of dried figs,
quince jam, honey with hints of aromatic herbs.
TASTE: Its taste is harmonious, round in mouth, warm: a great sweet wine.
SERVE WITH: It can be served with traditional cakes from Siena like Panforte e Ricciarelli.
It matches perfectly with blue cheeses of mild ripening. Can be sipped on its own.
WAY OF SERVING: Serve at 13-15°C in crystal shaped wine goblets.
HOME AGEING: Wine apt for a long ageing. Keep the bottles lying down
in a cool dark place
