GRAPE VARIETY: Sangiovese 70% Merlot 30%
YEALD: Grapes yeald of 6 tones per hectare HARVEST: Hand picking in crates. Grapes Selection on the vine
VINIFICATION: Fermentation in wood tanks at controlled temperature with selected yeats. Maceration post fermentation of 10/15 days
AGEING: 36 months in oak wood barrels and barriques. Bottle ageing of 2 months
PRODUCTION: 2.000 bordeaux bottles
ANALYSIS: alcohol 13,5%, tot. ac. 5 g/l
COLOR: dark ruby red slightly garnet on the rim.
AROMA: spicy notes with a prevalence of cinnamon and vanilla, evidently connected to the barrel ageing. Hints of Morello cherry, plume and violet
TASTE: full, harmonious and warm. Good structure which shows in the mouth the elegant of the barrel ageing and of the bottle refinement.
MATCHING DISHES: roasted meat, game and aged cheeses.
WAY OF SERVING: very versatile, it can be served during the whole meal: from pasta with meat sauce to the roast noble meats and aged cheeses.
Serve at 16-18°C in crystal balloon shaped wine goblets
